Previously known as "Taste It Wines," we relied solely on hotel retail placements, a strategy that seemed solid until the world came to a halt and travel stopped.
But rather than succumb to uncertainty, we made a swift pivot to e-commerce and introduced virtual tasting experiences featuring our beloved mini bottles to new audiences. It was a pivotal moment that led us to bring winemaking in-house and expand our portfolio by sourcing wines from all over the world.
Among our diverse offerings, the "California Wine Mixer" emerged as a fan favorite—a curated selection that celebrated the rich tapestry of California's wine regions, inviting participants to embark on a sensory journey through the Golden State's vineyards and varietals. Nestled in the heart of Tiburon, our Tasting Room quickly became a beacon of warmth and hospitality, welcoming guests to immerse themselves in the world of wine.
Our mini bottles also found a new home on the shelves of Target's Texas market—a testament to our loyal mini wine community. With each mini bottle 4-pack that found its place among the vibrant wine aisles, we felt the warmth of our community's embrace, spreading joy and cheer with every pour.
As the year unfolded, the need to better serve our community of mini wine lovers became increasingly evident. With that, Club Mini was born—a space where we could deepen our connection with our customers while offering them exclusive benefits and experiences. It's been an absolute joy getting to know our members on a deeper level and sharing our passion for wine together.

Cheddar and Chive Biscuits
Pair with your favorite Rosé
It's a tale as old as time...the savory richness of the cheddar combines with the delicate herbal notes of chives, creating a delightful, addicting and savory morsel. When paired with the subtle fruitiness and refreshing acidity of a Rosé, the biscuits' savory profile is accentuated, while the wine's crispness cleanses the palate, leaving behind layers of flavor with each sip.
Ingredients:
2 cup all purpose flour
2 tsp baking power
1/2 tsp baking soda
1/2 tsp kosher salt
1/4 tsp cracked black pepper
1 stick butter, cold and cut into cubes
1 eggs, beaten
2 tbsp water, cold
1/2 cup sour cream
1/2 cup chopped chives
1 cup Cheddar, grated
1 egg, lightly beaten for egg wash
Malden sea salt
Piment d’Espelette
Instructions:
Preheat oven to 400 degrees (F). Line two baking trays with parchment paper.
In a mixing bowl add flour, baking powder, baking soda, salt and black pepper – whisk too aerate. Add butter cubes and rub into the flour with your fingers, until you have fine crumbles.
In another bowl lightly beat with a fork to combine egg, cold water and sour cream. Add to the flour mixture and stir until the the dough is soft and starts to combine. Add the chives and cheddar and roughly mix together.
Tip onto a clean surface and kneed the dough a couple of times. Don’t overwork the dough, stop as soon as it comes together. Pat the dough out to a 1 inch thickness and cut into 2 inch rounds using a cutter. Place on prepared baking sheet.
Brush with egg wash and generously sprinkle with sea salt and Piment d’ Bake for 15 – 20 minutes until starting to golden. Serve warm (slathered with softened butter is always extra yummy!).

2lb (900g) of your favorite seafood (Suggestions: large shrimp, mussels, clams, firm white fish fillets such as cod or halibut)
1/4 cup olive oil
1 onion, finely chopped
1 red bell pepper, diced
3 cloves garlic, minced
2 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
4 cups chicken or seafood broth
1 cup frozen peas, thawed

1 pound (450g) large shrimp, peeled and deveined
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
Salt and pepper to taste
For the Citrus Salsa:
1 orange, segmented and diced
1 grapefruit, segmented and diced
1 lime, juiced
1 tablespoon finely chopped red onion
1 tablespoon chopped fresh cilantro
Salt and pepper to taste
Instructions:
Preheat your grill to medium-high heat. In a bowl, combine the olive oil, paprika, garlic powder, salt, and pepper. Add the peeled and deveined shrimp to the bowl and toss until well coated. In another bowl, prepare the citrus salsa by combining the diced orange, grapefruit, lime juice, red onion, cilantro, salt, and pepper. Mix well to combine all the flavors. Set aside.
Thread the marinated shrimp onto skewers, making sure to leave a little space between each shrimp. Place the shrimp skewers on the preheated grill. Cook for about 2-3 minutes per side until the shrimp turn pink and opaque. Be careful not to overcook them, as they can become rubbery.
Once the shrimp are cooked, remove them from the grill and transfer to a serving platter. Serve the grilled shrimp hot with the citrus salsa on the side. You can also drizzle some of the salsa over the shrimp for added flavor. Enjoy!

These bold flavors can complement the rich, meaty texture of the roasted salmon, adding depth and complexity to the pairing.

8 ounces (225g) mushrooms (such as cremini or button), sliced
2 tablespoons olive oil

Crafted with utmost care and inspired by the vibrant spirit of old world rosés, this wine encapsulates the essence of light, dry, and refreshing pink wines that have enchanted wine enthusiasts for generations.
To shed light on the inspiration behind this new release, we had the pleasure of interviewing our talented winemaker, Matt Smith, who shared his vision and passion for crafting this exceptional wine. We hope you enjoy it as much as we do.
Can you tell us about the inspiration behind this new Rosé wine?
MS: I love making rosé that is light, dry, crisp and refreshing. I’ve spent many afternoons on outdoor patios in southern France enjoying food and rosé with friends. This wine is meant to recreate that.
What makes this wine unique from other Rosés?
MS: Rosés can be hit or miss depending on the style and intention of the winemaker. I like to say ours is a “made on purpose" Rosé - the red grapes we used were picked at the perfect stage in the berry development to produce Rosé. This technique creates lower alcohol while maintaining exciting flavors, resulting in a balanced, refreshing wine.
Could you share some insights into the winemaking process involved in creating this Rosé?
MS: The whole-cluster fruit was handpicked in the early morning, direct-to-press. After the juice was pressed and had time to settle, it was racked and fermented cold in stainless steel. Once through primary fermentation, it was then chilled so the acidity remains bright and refreshing.
Can you elaborate on any sustainability initiatives or practices incorporated into the production of this Rosé wine?
MS: Our wines are sourced from vineyards with sustainable land management practices. We maintain grower-winemaker relations with small, family-owned wineries to support local wine communities locally and abroad. This vineyard in Mendocino is no exception!
What kind of occasion do you believe this Rosé wine product is best suited for?
MS: Outdoor patio gatherings with friends, pre-dinner occasions as well as throughout dinner. Pretty much morning, noon & night.
How would you describe the tasting notes and flavor profile of this wine?
MS: Watermelon, lychee, pear and strawberry notes, crisp, bright acidity, refreshing.
Can you provide insights into the specific aromas and nuances that can be expected from this Rosé wine, and how they contribute to the overall drinking experience?
MS: Overripe rosé can yield very one-dimensional aromas, dominated by strawberries and not very complex. Well-made rosés provide a wealth of fruit aromas and flavors. Natural acidity provides freshness making you want to come back for another sip!
Are there any specific food pairings that you would recommend to enhance and complement the flavors of this Rosé wine?
MS: Fresh, garden salads, chicken skewers, oysters, salade nicoise, rhubarb pie.
Could you share any information on the balance of acidity, sweetness, and body in this Rosé wine, and how it contributes to its overall structure?
MS: It is well balanced with bright acidity. It is a dry rosé, so the perception of sweetness comes from the fruity aromas and flavors in balance with the acidity and (lower) alcohol.

MS: 45 degrees

The "try before you buy" model has never been more appealing to the wine consumers of today, and In Good Taste is proud to provide this new service.
In 2021, the company completed a 65,000 square-foot, FDA approved packaging facility and warehouse in Graton, CA, which includes a custom-built bottling line. The facility provides a variety of multi-packing options, rework capabilities, a temperature-controlled storage area for case goods, and a large shipping area with multiple loading docks.
