This holiday twist on a classic Italian favorite blends the warmth of chai and pumpkin spice with velvety mascarpone and just the right hint of rum. Pair it with tonight’s wine for the ultimate festive treat—because you deserve it!

Ingredients

For the Cream Layer:

  • 1 cup heavy whipping cream
  • 1 cup pumpkin puree
  • ⅓ cup sugar
  • 2 tablespoons maple syrup
  • 8 oz. mascarpone cheese or cream cheese

For the Soaking Mix:

  • 1 cup chai concentrate (store-bought or homemade)
  • 2-4 tablespoons spiced rum (optional)

For Assembly and Garnish:

  • 2 tablespoons cocoa powder
  • 1 teaspoon pumpkin pie spice
  • 24 ladyfingers (one standard 7-oz. package)
  • Bittersweet chocolate for shaving on top (optional)

Instructions

  1. Whip the Cream Mixture: In a medium bowl, whip the heavy cream until soft peaks form. In another bowl, beat together the pumpkin puree, sugar, maple syrup, and mascarpone cheese until smooth. Gently fold the whipped cream into the pumpkin mixture until combined.
  2. Prepare the Layers: In a shallow bowl, mix the chai concentrate and spiced rum (if using). In a small bowl, combine the cocoa powder and pumpkin pie spice.
  3.  Start Layering: Sift half of the cocoa-pumpkin spice mix over the bottom of an 8×8-inch baking dish using a fine mesh sieve. Briefly dip half of the ladyfingers into the chai mixture (don’t oversoak to avoid sogginess) and arrange them in a single layer, rounded-side-up, on top of the dusted dish. Spread half of the pumpkin cream mixture evenly over the ladyfingers.
  4. Repeat and Finish: Add another layer of dipped ladyfingers and the remaining pumpkin cream. Dust the top layer with the remaining cocoa-pumpkin spice mix.
  5. Chill and Serve: Cover with plastic wrap and refrigerate for at least 3-4 hours, preferably overnight (up to 48 hours for maximum flavor). Before serving, garnish with bittersweet chocolate shavings, if desired.
