Yields: 2 servings
Ingredients:
- 2 pork chops (boneless or bone-in)
- 1 tablespoon ground coffee
- 2 tablespoons brown sugar
- 1 tablespoon smoked paprika
- 1 tablespoon chili powder
- 2 teaspoons kosher salt
- 1 teaspoon ground coriander
- 1 teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon cayenne (optional)
- 2 teaspoons olive oil
Instructions:
- Preheat the Oven: Preheat your traditional oven to 400°F (200°C).
- Prepare the Seasoning: In a small bowl or jar, mix together the ground coffee, brown sugar, smoked paprika, chili powder, salt, coriander, onion powder, garlic powder, cinnamon, and cayenne (if using). Stir until the spices are evenly combined.
- Prepare the Pork Chops: Lightly coat the pork chops with olive oil on both sides. This will help the seasoning adhere to the meat.
- Season the Pork Chops: Generously rub the coffee seasoning mixture onto both sides of the pork chops, ensuring to cover the sides as well.
- Cook the Pork Chops: Place the seasoned pork chops on a baking sheet lined with parchment paper or in a roasting pan. Transfer the pan to the preheated oven and bake for 12-15 minutes, depending on the thickness of the chops. (12 minutes for thin chops, up to 15 minutes for thicker chops, 1.25 inches or more.) Flip halfway through cooking to ensure even browning. The internal temperature should reach 145°F (63°C) when done.
- Rest the Pork Chops: Once cooked, carefully remove the pork chops from the oven and let them rest on a plate for 5 minutes before serving. This allows the juices to redistribute and ensures a tender, flavorful bite.
- Serve: Serve with roasted vegetables and Day 8 Advent Wine.
