This Advent "Day 8" recipe blends the bold, earthy richness of coffee with smoky, sweet, and savory spices for a truly unique crust. Perfect for a special occasion or just jazzing up your weeknight dinner, this steak will make you the star of any gathering—Uncle Todd will definitely approve!

Ingredients

  • 1 tablespoon ground coffee
  • 1 tablespoon light brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 2 New York strip steaks (1 ½ inches thick, 8 ounces each)

Directions

  1. Make the rub: In a small bowl, combine the ground coffee, light brown sugar, chili powder, black pepper, kosher salt, garlic powder, and oregano. Mix well.
  2. Prep the steaks: Place the New York strip steaks on a work surface. Generously coat each steak with the coffee rub, pressing it gently into the surface for maximum flavor.
  3. Let it rest: For the best results, allow the steaks to sit:
    1. At room temperature: Let them rest lightly covered for up to 30 minutes.
    2. Refrigerated: If prepping ahead, refrigerate the rubbed steaks for up to 4 hours. Remember to bring them to room temperature before cooking.
  4. Heat the grill: Preheat your grill to high heat. Grill the steaks for 5–6 minutes per side for medium-rare. For accuracy, use a meat thermometer to ensure the internal temperature reaches 130°F.
  5. Rest the steaks: Remove the steaks from the grill and place them on a cutting board. Tent loosely with foil and let rest for 5 minutes to retain their juices.
  6. Slice and serve: Slice the steaks against the grain for maximum tenderness. Pour any accumulated juices over the slices and finish with an extra sprinkle of kosher salt and black pepper.
