Everything is better with cheddar.

Cheddar and Chive Biscuits

Pair with your favorite Rosé

 

It's a tale as old as time...the savory richness of the cheddar combines with the delicate herbal notes of chives, creating a delightful, addicting and savory morsel. When paired with the subtle fruitiness and refreshing acidity of a Rosé, the biscuits' savory profile is accentuated, while the wine's crispness cleanses the palate, leaving behind layers of flavor with each sip.

Ingredients:

  • 2 cup all purpose flour

  • 2 tsp baking power

  • 1/2 tsp baking soda

  • 1/2 tsp kosher salt

  • 1/4 tsp cracked black pepper

  • 1 stick butter, cold and cut into cubes

  • 1 eggs, beaten

  • 2 tbsp water, cold

  • 1/2 cup sour cream

  • 1/2 cup chopped chives

  • 1 cup Cheddar, grated

  • 1 egg, lightly beaten for egg wash

  • Malden sea salt

  • Piment d’Espelette


Instructions:

Preheat oven to 400 degrees (F). Line two baking trays with parchment paper.

In a mixing bowl add flour, baking powder, baking soda, salt and black pepper – whisk too aerate. Add butter cubes and rub into the flour with your fingers, until you have fine crumbles.

In another bowl lightly beat with a fork to combine egg, cold water and sour cream. Add to the flour mixture and stir until the the dough is soft and starts to combine. Add the chives and cheddar and roughly mix together.

Tip onto a clean surface and kneed the dough a couple of times. Don’t overwork the dough, stop as soon as it comes together. Pat the dough out to a 1 inch thickness and cut into 2 inch rounds using a cutter. Place on prepared baking sheet.

Brush with egg wash and generously sprinkle with sea salt and Piment d’ Bake for 15 – 20 minutes until starting to golden. Serve warm (slathered with softened butter is always extra yummy!).
