Garlic Butter Shrimp

If you’re craving a dish that’s as easy to make as it is packed with flavor, this Garlic  Butter Shrimp is the perfect choice. Juicy shrimp are roasted in a simple yet delicious garlic, butter, and lemon sauce, creating an irresistible combination of savory and zesty flavors. This dish makes for a special addition to any holiday feast.

Yields: 4-6 servings

Ingredients:

  • 2 pounds extra large or jumbo shrimp, peeled and deveined, thawed if frozen
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large cloves garlic, minced
  • 4 tablespoons unsalted butter, softened
  • Freshly chopped parsley, for garnish (optional)
  • Lemon wedges, for serving (optional)

Instructions:

  1. Preheat the Oven: Set the oven to 350°F and arrange the oven rack in the middle position.
  2. Prepare the Shrimp: Spread the shrimp out on a baking sheet. Drizzle with olive oil and season with salt, black pepper, and minced garlic. Toss to coat the shrimp evenly.
  3. Roast the Shrimp: Place the baking sheet in the preheated oven and roast for about 8 minutes, or until the shrimp turn pink and are cooked through. Be careful not to overcook the shrimp, as they can become tough.
  4. Add the Butter: Once the shrimp are done, immediately add the softened butter to the hot baking sheet. Stir until the butter is completely melted and has mixed with the garlic, forming a delicious buttery sauce.
  5. Serve: Transfer the shrimp and the buttery sauce to a serving dish. Garnish with freshly chopped parsley, if desired, and serve with lemon wedges on the side for an extra burst of freshness. Pair with Advent Day 8 Wine.
