  • 12 oz spaghetti
  • 4 oz guanciale (or pancetta), diced
  • 1 can (14 oz) whole peeled tomatoes, crushed
  • 1 small onion, finely chopped (optional)
  • 2 cloves garlic, minced
  • 1 tsp red chili flakes (adjust to taste)
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • ¼ cup grated Pecorino Romano cheese, for serving
  • Fresh parsley, chopped, for garnish

Steps:

  1. Cook spaghetti according to package instructions. Reserve ½ cup pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add guanciale and cook until crisp. Remove some excess fat if needed.
  3. Add onion (if using) and garlic, sautéing until fragrant. Stir in red chili flakes.
  4. Add crushed tomatoes, season with salt and pepper, and simmer for 10–12 minutes until sauce thickens slightly.
  5. Toss cooked spaghetti in the sauce, adding reserved pasta water as needed for a silky consistency.
  6. Serve hot, garnished with Pecorino Romano, parsley, and a glass of 2022 Andiamo Barbera to highlight the bright, juicy fruit and subtle spice notes that enhance the dish.
