  • Ingredients:
  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 2 tbsp white miso paste
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup or honey
  • 1 tsp rice vinegar
  • Salt and black pepper, to taste
  • Sesame seeds, for garnish (optional)

Steps:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together miso paste, soy sauce, maple syrup, rice vinegar, and olive oil.
  3. Toss Brussels sprouts in the miso mixture until evenly coated. Spread on a baking sheet in a single layer.
  4. Roast for 20–25 minutes, stirring halfway through, until tender and caramelized.
  5. Season with salt and black pepper, and garnish with sesame seeds if desired.
