Baked Sweet Potatoes with Chipotle Butter

Baked Sweet Potatoes with Chipotle Butter are a cozy, flavorful side dish with a perfect balance of natural sweetness and smoky heat. The 2022 Wild Child Petite Sirah pairs beautifully with these potatoes—the wine’s deep blackberry and blueberry notes, along with its smoky spice, mirror the rich sweetness of the sweet potatoes while complementing the chipotle’s gentle heat. Ingredients:

4 medium sweet potatoes, scrubbed
Olive oil, for brushing
4 tbsp unsalted butter, softened
1–2 tsp chipotle in adobo sauce, finely chopped (adjust to taste)
1 tsp honey
Salt, to taste

Steps:

Preheat oven to 400°F (200°C). Prick sweet potatoes several times with a fork, brush with olive oil, and sprinkle lightly with salt.
Place sweet potatoes on a baking sheet and bake for 45–60 minutes, until tender when pierced with a fork.
While potatoes bake, mix softened butter, chopped chipotle, honey, and salt in a small bowl until well combined.
Once baked, split sweet potatoes open and top each with a dollop of chipotle butter.
