Ingredients:

  • 3–4 lb prime rib roast
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup beef stock
  • 1 cup 2023 Balance of Powers Cabernet Franc
  • 1 small shallot, minced
  • 1 tbsp butter
  • Salt and pepper, to taste

Steps:

  1. Preheat oven to 450°F (230°C). Rub prime rib with olive oil, garlic, rosemary, thyme, salt, and pepper.
  2. Roast for 15 minutes, then reduce oven temperature to 325°F (165°C) and continue roasting 1–1.5 hours, until internal temperature reaches 130–135°F (medium-rare). Remove from oven and let rest 15–20 minutes.
  3. Meanwhile, prepare the red wine jus: In a small saucepan, sauté shallots in butter until softened. Add Cabernet Franc and beef stock, simmering until reduced by half. Season with salt and pepper.
  4. Slice the prime rib and serve with the red wine jus poured over the top.
