Filet Mignon with Rosemary Butter

Filet Mignon is already a showstopper — tender, luxurious, and melt-in-your-mouth. But a quick rosemary butter spooned over the top takes it straight into special occasion territory with almost zero extra effort. Pair it with our 2023 Stealing Thunder Cabernet Sauvignon, a bold, beautifully structured Cab with dark berry richness and just enough tannin to stand up to the steak’s richness. The rosemary butter amplifies the wine’s herb and oak notes, making every bite feel purposeful, cozy, and a little bit indulgent.

Ingredients:

  • 2 filet mignon steaks (about 1½ inches thick)
  • Salt & black pepper
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 clove garlic, smashed
  • 1–2 sprigs fresh rosemary (or ½ tsp dried, in a pinch)

Steps:

  1. Pat steaks dry. Season both sides generously with salt and pepper.
  2. Heat olive oil in a cast iron or heavy skillet over medium-high heat.
  3. Add steaks and sear 3–4 minutes per side, or until browned.
  4. Reduce heat to medium. Add butter, garlic, and rosemary to the pan.
  5. Tilt the pan and spoon the melted butter over the steaks for 1–2 minutes.
  6. Remove steaks and let rest for 5 minutes. (Don’t skip this — it locks in the juices.)
  7. Spoon rosemary butter from the pan on top before serving.
