Duck Breast with Cherry Reduction

Rich and luxurious, pan-seared duck breast paired with a silky cherry reduction makes for a festive, holiday-worthy dish. The bright, fruit-forward notes of the JCB Pinot Noir Carneros 2023 complement the sweet-tart cherry sauce and the succulent, savory duck, creating a perfectly balanced flavor experience.

Ingredients:

  • 2 duck breasts, skin on
  • Salt and pepper, to taste
  • 1 cup fresh or frozen cherries, pitted
  • 1/4 cup red wine
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp fresh thyme leaves

Steps:

  1. Score the skin of the duck breasts and season both sides with salt and pepper.
  2. Heat a skillet over medium heat and sear duck breasts skin-side down for 6–8 minutes until the skin is crispy. Flip and cook for another 4–5 minutes for medium-rare. Remove and rest.
  3. In the same skillet, add cherries, red wine, balsamic vinegar, honey, and thyme. Simmer for 5–7 minutes until the sauce thickens slightly.
  4. Slice the duck breasts and drizzle with cherry reduction. Serve immediately alongside your JCB Pinot Noir Carneros 2023.
