Fettuccine with Shiitake Mushrooms

Tender fettuccine tossed with earthy shiitake mushrooms creates a cozy, elegant dish perfect for holiday dinners. The bright berry and subtle cocoa notes of DeLoach Pinot Noir Central Coast 2023 complement the umami richness of the mushrooms, while its medium body balances the pasta’s creamy texture, making this a refined and festive pairing.

Ingredients:

  • 12 oz fettuccine pasta
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 8 oz shiitake mushrooms, sliced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Steps:

  1. Cook fettuccine according to package instructions. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Add garlic and sauté 1 minute. Add shiitake mushrooms and cook 5–6 minutes until tender.
  3. Reduce heat and stir in heavy cream. Simmer 2–3 minutes, then add Parmesan cheese, salt, and pepper.
  4. Toss cooked fettuccine with mushroom cream sauce until well coated.
  5. Garnish with chopped parsley and serve immediately with a glass of DeLoach Pinot Noir.

Serves 4.
