Chocolate Mousse

Rich, velvety chocolate mousse is a decadent holiday dessert that feels both luxurious and festive. The bold dark fruit, mocha, and black pepper notes of Buena Vista Red Wine “The Captain” Sonoma County 2019 beautifully enhance the chocolate’s depth, creating a sophisticated pairing that balances richness with elegance.

Ingredients:

  • 6 oz bittersweet chocolate, chopped
  • 3 large eggs, separated
  • 1/4 cup sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: chocolate shavings or fresh berries for garnish

Steps:

  1. Melt chocolate in a heatproof bowl over simmering water (or microwave in 20-second intervals). Let cool slightly.
  2. In a bowl, beat egg yolks with half the sugar until pale and creamy; fold into melted chocolate.
  3. In a separate bowl, whip heavy cream with vanilla until soft peaks form. Gently fold into chocolate mixture.
  4. Beat egg whites with remaining sugar and a pinch of salt until stiff peaks form; carefully fold into chocolate mixture.
  5. Spoon mousse into serving glasses and chill at least 2 hours. Garnish with chocolate shavings or berries and serve with a glass of Buena Vista Red Wine “The Captain”.
