Chocolate Caramel Tart with Sea Salt

This decadent chocolate caramel tart combines rich chocolate, buttery caramel, and a hint of sea salt for a sophisticated dessert experience. The bold black fruit, dark chocolate, and tobacco notes of Buena Vista Cabernet Sauvignon Napa Valley 2022 perfectly complement the tart’s richness, creating an elegant pairing that’s ideal for holiday celebrations or special occasions.

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 large egg yolk
  • 2–3 tbsp ice water
  • 1 cup granulated sugar
  • 6 tbsp unsalted butter, cut into pieces
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 6 oz bittersweet chocolate, chopped
  • 1/2 cup heavy cream
  • Sea salt flakes for garnish

Steps:

  1. Preheat oven to 350°F (175°C). Prepare crust by mixing flour, cocoa, and sugar. Cut in butter until crumbly, then add egg yolk and ice water until dough forms. Press into a tart pan and bake 15–18 minutes. Let cool.
  2. Make caramel: in a saucepan over medium heat, melt sugar until golden, whisk in butter, then slowly stir in cream. Add vanilla and sea salt. Pour caramel into cooled tart shell; chill 30 minutes.
  3. Make ganache: heat cream until simmering, pour over chopped chocolate, let sit 2 minutes, then stir until smooth. Pour ganache over set caramel and chill until firm, about 1 hour.
  4. Sprinkle sea salt flakes on top before serving with a glass of Buena Vista Cabernet Sauvignon.
