Frenchie Red Wine North Coast 2022

The Frenchie Red Wine North Coast 2022 opens with exuberant aromas of raspberry, baked blueberry pie, and a hint of fragrant rose petal. The palate bursts with ripe cherry, luscious strawberry, and tangy pomegranate, balanced by subtle nutmeg and cedar. Supple tannins and vibrant acidity culminate in a long, satisfying finish.

Frenchie was a gift from Raymond Vineyards Proprietor, Jean-Charles Boisset to his wife, Gina Gallo. Jean-Charles knew that with his fast-paced life in the wine business he would be away from home often and wanted to make sure Gina was always in the company of a true French gentleman. In fact, Frenchie is the perfect gentleman – he’s loyal, charming, always up for an adventure, and he never talks back! His playful, debonair and aristocratic style is reflected in his winery and his wines.

Chocolate Pots de Crème

Rich, velvety, and indulgent, these Chocolate Pots de Crème are a perfect dessert for the holidays. The deep, dark chocolate flavors are beautifully complemented by the luscious berry and subtle spice notes of the Frenchie Red Wine North Coast 2022, creating a luxurious and sophisticated pairing.

Ingredients:

  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 oz dark chocolate, finely chopped
  • 3 large egg yolks
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • Whipped cream, for garnish
  • Fresh berries, for garnish

Steps:

  1. Preheat oven to 325°F (160°C).
  2. In a saucepan, heat cream and milk over medium heat until just simmering. Remove from heat and add the chopped chocolate, stirring until melted and smooth.
  3. In a bowl, whisk together egg yolks, sugar, and vanilla. Slowly pour the warm chocolate mixture into the yolks, whisking constantly.
  4. Strain the mixture through a fine mesh sieve into small ramekins.
  5. Place ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins. Bake for 25–30 minutes, until the edges are set but the center still slightly jiggly.
  6. Remove from oven, cool slightly, then refrigerate for at least 2 hours.
  7. Serve chilled with a dollop of whipped cream and fresh berries alongside the Frenchie Red Wine North Coast 2022.
