Roasted Citrus Salmon Steaks are tender, flavorful, and infused with bright, zesty citrus notes that enhance the natural richness of the fish. The 2023 Andiamo Pinot Grigio pairs beautifully with this dish—its crisp, refreshing profile with lemon zest, green apple, and almond notes complements the citrus marinade while balancing the salmon’s richness. Together, they create a light, vibrant, and elegant pairing perfect for a weeknight dinner or a special occasion.

Ingredients:

  • 4 salmon steaks (about 6 oz each)
  • 2 tbsp olive oil
  • Zest and juice of 1 orange
  • Zest and juice of 1 lemon
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley or dill, for garnish

Steps:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, citrus zest and juice, garlic, salt, and pepper.
  3. Place salmon steaks on a baking sheet and brush generously with the citrus mixture. Let marinate 10–15 minutes.
  4. Roast salmon for 12–15 minutes, or until cooked through and flaky.
  5. Serve immediately, garnished with fresh herbs, alongside a glass of 2023 Andiamo Pinot Grigio, letting the wine’s crisp citrus and almond notes enhance the bright, roasted flavors of the salmon.
