Ingredients:

  • 12 oz pasta (fettuccine, linguine, or your choice)
  • 1 cup ricotta cheese
  • Zest and juice of 1 lemon
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1/4 cup grated Parmesan cheese, for serving

Steps:

  1. Cook pasta according to package instructions. Reserve 1/2 cup pasta water and drain.
  2. In a large skillet, heat olive oil over medium heat. Sauté garlic until fragrant, about 1 minute. Add spinach and cook until just wilted.
  3. Reduce heat to low and stir in ricotta, lemon juice, and zest. Add reserved pasta water as needed to create a smooth, creamy sauce.
  4. Toss cooked pasta in the sauce until evenly coated. Season with salt and pepper.
