Thai Lemongrass Chicken Skewers

The marinade is packed with lemongrass, lime, ginger, and a touch of honey for balance, giving the chicken a tender texture and vibrant flavor. The wine’s tangerine, mango, and white peach notes elevate the lemongrass and keep the dish feeling light and refreshing. This is an easy, elegant meal that tastes like sunshine.

Ingredients:

  • 1 ½ lbs chicken thighs, cut into strips
  • 2 stalks lemongrass, tough outer leaves removed, finely minced
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 2 tbsp soy sauce or tamari
  • 1 tbsp neutral oil (canola, avocado, etc.)
  • Wooden skewers (soak in water for 15 minutes)
  • Fresh cilantro or basil, for garnish
  • Lime wedges, for serving

Steps:

  1. In a bowl, whisk together lemongrass, garlic, ginger, lime juice, honey, soy sauce, and oil.
  2. Add chicken and toss to coat. Cover and marinate for at least 30 minutes (up to 4 hours).
  3. Preheat a grill or grill pan to medium-high heat.
  4. Thread marinated chicken onto skewers.
  5. Grill 3–4 minutes per side, or until lightly charred and cooked through.
  6. Garnish with fresh herbs and serve with lime wedges.
  7. Pour a chilled glass of Mr. B French Columbard — the wine’s crisp citrus lift complements the lemongrass beautifully.
