Roasted Red Pepper & Goat Cheese Flatbread

This flatbread is simple, elegant, and full of bright Mediterranean flavor. Creamy goat cheese melts into roasted red peppers, caramelized onion, and a hint of herbs, creating a savory-sweet balance that feels cozy yet light. Paired with the 2023 Stealing Thunder Rosé of Grenache, the match is seamless—the wine’s notes of pomegranate, wild herbs, and citrus zest brighten the roasted vegetables and cut through the creaminess of the cheese. It’s the easiest “wow” dish for happy hour or holiday grazing.

Ingredients:

  • 1 store-bought flatbread or naan
  • 4 oz goat cheese, softened
  • ½ cup roasted red peppers, sliced (jarred or homemade)
  • 1 small red onion, thinly sliced
  • 1 tbsp olive oil
  • ½ tsp dried oregano (or thyme)
  • Salt & pepper to taste
  • Fresh basil or arugula, for serving

Steps:

  1. Preheat oven to 400°F.
  2. Heat olive oil in a small pan and sauté the red onion for 5–7 minutes, until soft and lightly caramelized.
  3. Place flatbread on a baking sheet. Spread goat cheese evenly over the top.
  4. Arrange roasted red peppers and caramelized onions over the goat cheese.
  5. Sprinkle with oregano, salt, and pepper.
  6. Bake for 8–10 minutes, until warmed through and lightly crisp around the edges.
  7. Top with fresh basil or arugula just before serving.
