Raspberry & Pistachio Tart

This Raspberry & Pistachio Tart is a vibrant, elegant dessert that combines sweet-tart raspberries with the nutty richness of pistachios in a crisp, buttery crust. The Betise Raspberry Rosé pairs beautifully with this tart—its playful raspberry, sweet cherry, and delicate rose petal notes mirror the tart’s fresh fruit while adding a lively, floral lift. Together, they create a balanced, visually stunning, and delightfully flavorful pairing perfect for celebrations or a sophisticated dessert course.

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1 egg yolk
  • 2–3 tbsp cold water
  • 1 cup pistachios, finely chopped or ground
  • 1/2 cup sugar
  • 2 tbsp butter, softened
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream
  • 1 1/2 cups fresh raspberries
  • Optional: powdered sugar for garnish

Steps:

  1. Preheat oven to 350°F (175°C).
  2. Prepare the crust: In a bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Add egg yolk and cold water, mixing until dough forms. Press into a tart pan and chill 15 minutes.
  3. Blind bake the crust for 15 minutes, then remove weights and bake another 10 minutes until lightly golden. Let cool slightly.
  4. Prepare the filling: In a bowl, mix pistachios, sugar, butter, vanilla, and cream until smooth. Spread evenly over the baked crust.
  5. Arrange fresh raspberries on top of the pistachio filling. Chill 30 minutes before serving.
  6. Serve slices with a glass of Betise Raspberry Rosé, letting the wine’s bright fruit and floral notes enhance the tart’s sweet-tart flavors and nutty undertones.
