Ingredients:

  • 2 lbs butternut squash, peeled, seeded, and cubed
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 tsp fresh sage, chopped (plus extra for garnish)
  • 1/2 cup heavy cream or coconut cream (optional, for extra creaminess)

Steps:

  1. Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper. Roast for 25–30 minutes, until tender and lightly caramelized.
  2. In a large pot, sauté onion and garlic until soft and fragrant. Add roasted squash and broth. Bring to a simmer for 10–15 minutes.
  3. Stir in chopped sage and blend the soup using an immersion blender (or in batches in a blender) until smooth and creamy.
  4. Stir in cream if using, and adjust seasoning with salt and pepper.
  5. Serve warm, garnished with extra sage, alongside a glass of 2022 La Pluma Chardonnay, letting the wine’s buttery, golden apple notes enhance the richness and subtle sweetness of the roasted butternut squash.
