Ingredients:

  • 4 large portobello mushrooms, stems and gills removed, wiped clean
  • ¼ cup balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon chopped fresh rosemary (or ½ teaspoon dried rosemary)
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper (optional, plus additional to taste)
  • Canola or vegetable oil for grilling
  • Optional for serving: Herby Avocado Sauce (or toppings like cheese, spinach, tomato, and avocado for mushroom burgers)

Instructions:

  1. Marinate the Mushrooms: In a shallow baking dish, whisk together the balsamic vinegar, olive oil, soy sauce, rosemary, garlic powder, black pepper, and cayenne. Taste and adjust the seasonings if desired. Add the cleaned portobello mushrooms to the dish, turning them to coat in the marinade. Let the mushrooms sit for 5 minutes on one side, then flip them and let sit for an additional 5 minutes. If you have time, you can let them marinate for up to 30 minutes for a more intense flavor.
  2. Prepare the Grill: Preheat a grill or a large skillet over medium heat (about 350°F to 400°F). Brush the grill or skillet with a little oil to prevent sticking.
  3. Grill the Mushrooms: Remove the mushrooms from the marinade, shaking off any excess, but reserving the marinade for basting. Place the mushrooms on the grill or skillet, cooking for 3-4 minutes on each side, or until they become caramelized and deep golden brown. Brush the remaining marinade over the mushrooms occasionally as they cook to keep them flavorful and juicy.
  4. Serve: Once cooked, remove the mushrooms from the grill and serve immediately. For extra flavor, top them with herby avocado sauce, or serve them on buns with fresh toppings for a delicious mushroom burger.
