Holiday Potluck Cashew Queso Dip

Featuring raw cashews, hot Rotel tomatoes, and a blend of savory spices, this dip offers a crowd-pleasing balance of heat and umami that pairs perfectly with chips, crackers, or fresh veggies. It’s simple to make, and you can prepare it ahead of time to enjoy more time celebrating with your guests.

Ingredients

  • 1 ½ cups raw cashews
  • 1 can "hot" Rotel tomatoes
  • 3 heaping tbsp nutritional yeast
  • Dash of salt, pepper, turmeric, garlic powder

Directions

  1. Soak the Cashews: Place the raw cashews in a bowl and cover them with water. Let them soak for at least 2 hours, or overnight for a creamier consistency. Drain and rinse them once they’re done soaking.
  2. Blend the Ingredients: In a high-speed blender or food processor, combine the soaked cashews, Rotel tomatoes, nutritional yeast, and all spices (salt, pepper, turmeric, and garlic powder). Blend until smooth and creamy.
  3. Adjust Seasoning: Taste the dip and adjust the seasoning if needed. Add more salt, pepper, or spices to suit your taste. If the dip is too thick, you can add a little water or vegetable broth to reach your desired consistency.
  4. Serve and Enjoy: Transfer the dip to a serving bowl and garnish with chopped fresh cilantro or parsley, if desired. Serve with tortilla chips, crackers, or fresh veggies for dipping! Pair with "Day 6" wine for an added spicy kick.
