Yields: 4 Servings
Ingredients
- 2 (15–16 ounce) New York Strip Steaks
- 2 tablespoons olive oil
- 10–15 sprigs fresh thyme
- 2–3 sprigs fresh rosemary
- 6–8 garlic cloves, smashed
- 4 tablespoons unsalted butter
- Sea salt and fresh cracked pepper, to taste
Instructions
- Season Steaks: Season both sides of the steaks generously with sea salt and cracked black pepper.
- Heat Oil: Heat olive oil in a large skillet over high heat until it just begins to smoke.
- Add Herbs: Add the steaks to the skillet, then reduce heat to medium-high. Add the thyme, rosemary, garlic, and butter to the pan.
- Brown: Cook the steaks for 5–6 minutes on the first side, occasionally moving them around the pan to ensure even browning.
- Baste: Flip the steaks and immediately begin basting them with the melted butter and herb mixture. Continue basting for 2–3 minutes.
- Let Rest: Remove the steaks from the skillet and let them rest for 3–4 minutes to allow the juices to redistribute.
- Slice and Serve: Slice the steaks against the grain and serve warm, garnished with the herbs and a drizzle of pan sauce if desired.
Serve this dish alongside roasted potatoes and seasonal vegetables, and pair it with a Day 18 Wine from your advent calendar.
