Ingredients

  • 1 box of your favorite pasta
  • 1 jar roasted red peppers
  • ½ cup raw cashews
  • 1 tbsp olive oil
  • 2 cloves garlic
  • ½ lemon, juiced
  • 2 tbsp nutritional yeast
  • Salt, pepper, and red pepper flakes to taste
  • Optional: Fresh basil for garnish or cooked Italian sausage for added protein

Directions

  1. Cook the pasta: Prepare the pasta according to the package instructions. Drain and set aside.
  2. Prepare the sauce: Add all the remaining ingredients—roasted red peppers, cashews, olive oil, garlic, lemon juice, nutritional yeast, and seasonings—to a blender in the order listed.
  3. Blend until creamy: Use a heat-safe or high-speed blender on the heat setting, blending until the mixture becomes smooth and velvety.
  4. Combine and serve: Pour the creamy roasted red pepper sauce over the pasta. Toss gently to coat, then serve warm. Garnish with fresh basil or add in cooked Italian sausage, if desired.
