Ingredients:

• 8 oz dark chocolate, chopped
• ½ cup heavy cream
• 1 tsp instant espresso powder
• 2 tbsp unsalted butter, softened
• 1 tsp vanilla extract
• Cocoa powder or finely chopped chocolate, for rolling

Steps:

1. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and stir in the espresso powder until dissolved.
2. Pour the hot cream over the chopped dark chocolate in a heatproof bowl. Let sit for 2–3 minutes, then stir until smooth and glossy.
3. Stir in the butter and vanilla extract until fully incorporated.
4. Cover the mixture and refrigerate for 1–2 hours, or until firm enough to scoop.
5. Using a small cookie scoop or spoon, form the chocolate mixture into 1-inch balls. Roll each truffle in cocoa powder or finely chopped chocolate to coat.
6. Store truffles in the refrigerator until ready to serve.
