Ingredients:

• 4 lbs beef short ribs
• Salt and pepper, to taste
• 2 tbsp olive oil
• 1 large onion, chopped
• 3 cloves garlic, minced
• 2 carrots, chopped
• 2 celery stalks, chopped
• 1 cup red wine
• 2 cups beef broth
• 2 tbsp tomato paste
• 2 sprigs fresh rosemary
• 2 sprigs fresh thyme
• 2 bay leaves
  

Steps:

1. Season the short ribs with salt and pepper. In a skillet, sear them in olive oil over medium-high heat until browned on all sides.
2. Transfer the ribs to a slow cooker. Add onions, garlic, carrots, and celery.
3. Stir together red wine, beef broth, and tomato paste; pour over the ribs. Add rosemary, thyme, and bay leaves.
4. Cover and cook on low for 6–8 hours, until the meat is tender and falling off the bone.
5. Remove herbs and serve ribs with the braising sauce spooned over the top.
