Ingredients

• 2 lbs russet or Yukon Gold potatoes, peeled and cut into chunks
• 4 tbsp unsalted butter
• ½ cup heavy cream (more as needed)
• 1–2 tsp truffle oil (adjust to taste)
• Salt and freshly ground black pepper, to taste
• Fresh chives, chopped, for garnish (optional)

Steps:

1. Place potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until tender, about 15–20 minutes. Drain well.
2. Mash the potatoes using a potato masher or ricer until smooth.
3. Stir in butter and heavy cream until creamy and well combined.
4. Drizzle in truffle oil, starting with 1 tsp and adding more to taste. Season generously with salt and black pepper.
5. Transfer to a serving bowl and garnish with chopped chives if desired.
6. Serve warm alongside a glass of 2022 Fortune Favors Syrah for a rich, earthy, and indulgent pairing.
