Eggplant Parmesan

Crispy, golden slices of eggplant layered with rich marinara sauce and melted mozzarella, finished with a sprinkle of Parmesan and fresh basil. Comforting, hearty, and full of Italian flavor, this classic dish is perfect for a satisfying vegetarian meal.

Ingredients:

2 medium eggplants, sliced into ½-inch rounds
Salt
1 ½ cups all-purpose flour
3 large eggs, beaten
2 cups breadcrumbs
½ cup grated Parmesan cheese
2 cups marinara sauce
2 cups shredded mozzarella cheese
Olive oil, for frying
Fresh basil, for garnish

Steps:

Sprinkle eggplant slices with salt and let sit for 20 minutes to draw out moisture; pat dry.
Dredge each slice in flour, dip in beaten eggs, then coat with breadcrumbs mixed with Parmesan.
Heat olive oil in a skillet and fry eggplant slices until golden brown on both sides; drain on paper towels.
Preheat oven to 375°F (190°C). In a baking dish, layer fried eggplant, marinara sauce, and mozzarella.
Repeat layers, finishing with mozzarella and a sprinkle of Parmesan.
Bake 25–30 minutes until cheese is melted and bubbly. Garnish with fresh basil before serving.
