Ingredients:

• 2 ¼ cups all-purpose flour
• 2 tsp ground ginger
• 1 tsp cinnamon
• ½ tsp nutmeg
• ½ tsp ground cloves
• ½ tsp baking soda
• ¼ tsp salt
• ¾ cup unsalted butter, softened
• ½ cup brown sugar
• ⅓ cup molasses
• 1 egg
• Optional: coarse sugar for topping

Steps:

1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
2. In a bowl, whisk together flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt.
3. In a separate bowl, beat butter and brown sugar until light and fluffy.
4. Add the molasses and egg, mixing until smooth.
5. Add the dry mixture to the wet mixture and stir until a soft dough forms.
6. Scoop dough into 1–1½ inch balls.
7. (Roll in coarse sugar if you want sparkle!)
8. Place on baking sheet and bake 8–10 minutes, until edges are set but centers are still soft.
9. Let cool a few minutes before transferring to a rack.
