Riesling is one of the great chameleons of the wine world, and this California expression shows off its lighter, more aromatic side. Coconut Lemongrass Chicken Curry

Fragrant, creamy, and gently spiced, this Thai-inspired curry wraps tender chicken in a silky coconut broth perfumed with lemongrass and ginger. Mr B Riesling echoes the dish's floral aromatics and exotic spice with its lychee and rose notes, creating a beautifully seamless pairing.

Ingredients

  • Chicken thighs, boneless and cut into chunks
  • 1 can coconut milk
  • 2 stalks lemongrass, bruised
  • 2 tsp ginger, grated
  • 3 cloves garlic, minced
  • 2 tbsp red or yellow curry paste
  • Fish sauce to taste
  • Lime juice
  • Fresh basil or cilantro
  • Jasmine rice for serving

Steps

  1. Sauté garlic, ginger, and curry paste in a large pan over medium heat for 1–2 minutes.
  2. Add lemongrass and chicken. Cook until lightly browned.
  3. Pour in coconut milk and bring to a gentle simmer.
  4. Cook 15–20 minutes until chicken is cooked through and sauce thickens slightly.
  5. Season with fish sauce and lime juice. Remove lemongrass stalks.
  6. Serve over jasmine rice and garnish with fresh herbs.
