Stealing Thunder Red Wine

A California red with conviction, generous and sun-warmed, the kind of wine that feels immediately at ease in the world. Dark plum and ripe blackberry front and center, lush and confident. A thread of spice weaves through, black pepper, a hint of clove, giving the fruit some structure and intrigue. The tannins are present but polished, the finish long and satisfying.

This is a wine that doesn't need an occasion. It is the occasion.

BBQ Ribs

Slow-cooked, fall-off-the-bone ribs slathered in smoky, sticky BBQ sauce — the ultimate crowd-pleasing centerpiece. Stealing Thunder's bold Red Wine delivers dark fruit, a hint of smoke, and enough backbone to stand up to the deep, caramelized flavors of great BBQ ribs.

Ingredients

  • Pork spare ribs or baby back ribs
  • Dry rub: brown sugar, smoked paprika, garlic powder, onion powder, cumin, salt, pepper, cayenne
  • Your favorite BBQ sauce
  • Apple cider vinegar (for spritzing)

Steps

  1. Remove membrane from the back of the ribs. Coat generously with dry rub on all sides.
  2. Let sit at room temperature 30 minutes or refrigerate overnight for deeper flavor.
  3. Cook low and slow: either in the oven at 275°F (135°C) for 3–3.5 hours wrapped in foil, or on a smoker for 5–6 hours.
  4. Spritz with apple cider vinegar every hour if using a smoker.
  5. Unwrap, brush with BBQ sauce, and finish on a hot grill or under the broiler for 5–10 minutes until caramelized and sticky. Rest briefly before slicing.
