Grilled Sea Bass with Whipped Potatoes

Perfectly grilled sea bass with crispy, golden skin resting over clouds of silky whipped potato. Elegant yet totally approachable. Mr. B's Grenache Blanc brings stone fruit, white floral notes, and a rounded body that complement the delicate fish and rich, buttery potato without overpowering either.

Ingredients

  • Sea bass fillets, skin on
  • Olive oil
  • Salt and pepper
  • Lemon
  • Fresh thyme
  • Yukon gold potatoes, peeled and quartered
  • Butter
  • Heavy cream or whole milk
  • Chives for garnish

Steps

  1. Boil potatoes until very tender. Drain and press through a ricer or mash well. Fold in warm butter and cream until silky. Season with salt.
  2. Pat sea bass dry and season with salt, pepper, and thyme.
  3. Heat olive oil in a heavy pan or grill over high heat. Cook fish skin-side down, pressing gently for 3–4 minutes until skin is crispy.
  4. Flip and cook 1–2 minutes more until just cooked through.
  5. Spoon whipped potatoes onto plates, top with sea bass skin-side up, and finish with a squeeze of lemon and fresh chives.
