Dark Chocolate Mousse Cakes

Intensely rich individual chocolate mousse cakes with a bittersweet depth that feels indulgent without being heavy. Crimson Rosella's Sparkling Shiraz is a show-stopper. Its dark berry fruit, mocha notes, and celebratory bubbles make it the ultimate partner for deep, dark chocolate.

Ingredients

  • 6 oz dark chocolate (70% or higher), chopped
  • 3 tbsp butter
  • 3 eggs, separated
  • ¼ cup sugar
  • 1 cup heavy cream
  • Pinch of salt
  • Cocoa powder or chocolate shavings for garnish
  • Optional: raspberry coulis for serving

Steps

  1. Melt chocolate and butter together over a double boiler. Let cool slightly.
  2. Whisk egg yolks with half the sugar until pale and thick. Fold into chocolate mixture.
  3. Whip cream to soft peaks and fold gently into the chocolate base.
  4. Beat egg whites with remaining sugar and a pinch of salt to stiff peaks. Carefully fold into mousse.
  5. Spoon into individual ramekins, cups, or ring molds. Refrigerate at least 2 hours until set.
  6. Dust with cocoa powder or chocolate shavings and serve with raspberry coulis if desired.
