Vietnamese Shrimp Spring Rolls

Fresh, light, and endlessly dippable — these no-cook rice paper rolls are packed with shrimp, crisp vegetables, herbs, and rice noodles. Mr. B's Riesling brings a hint of sweetness, zippy acidity, and floral freshness that complement the bright herbs and savory peanut dipping sauce beautifully.

Ingredients

  • Large shrimp, cooked and halved lengthwise
  • Rice paper wrappers
  • Rice vermicelli noodles, cooked
  • Butter lettuce leaves
  • Cucumber, julienned
  • Carrots, julienned
  • Fresh mint, basil, and cilantro
  • For peanut dipping sauce: peanut butter, soy sauce, lime juice, honey, garlic, chili flakes, water to thin

Steps

  1. Whisk together all peanut sauce ingredients until smooth. Set aside.
  2. Soak a rice paper wrapper in warm water for 10–15 seconds until pliable.
  3. Lay flat and layer with lettuce, noodles, vegetables, herbs, and shrimp.
  4. Fold in the sides and roll tightly.
  5. Repeat with remaining wrappers and serve immediately with peanut dipping sau
