Charred Red Pepper and Seafood Bisque

Smoky charred peppers and a rich seafood-laden broth come together in this deeply flavored, velvety bisque. Wild Child's Grenache offers warm red fruit, subtle spice, and a silky texture that mirrors the soup's richness and plays beautifully off the smoky pepper base.

Ingredients

  • 3 red bell peppers
  • Shrimp and/or scallops
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups seafood or vegetable broth
  • 1 cup heavy cream
  • Olive oil
  • Smoked paprika
  • Salt and pepper
  • Fresh parsley for garnish
  • Crusty bread for serving

Steps

  1. Char red peppers directly over a flame or under a broiler until blackened. Peel, seed, and roughly chop.
  2. Sauté onion and garlic in olive oil until soft. Add charred peppers and smoked paprika.
  3. Pour in broth and simmer 10 minutes. Blend until smooth.
  4. Stir in cream and return to a gentle simmer.
  5. Add shrimp and/or scallops and cook until just done, 3–4 minutes.
  6. Season to taste and serve with parsley and crusty bread.
