Thai Peanut Chicken Satay

Tender, marinated chicken skewers grilled to perfection and served with a creamy, slightly spicy peanut sauce make for a festive and flavorful appetizer. The bright red berry notes and soft spice of Wattle Creek Grenache Sonoma County 2023 harmonize beautifully with the satay’s savory-sweet peanut flavors, creating an elegant, holiday-ready pairing.

Ingredients:

  • 1 lb boneless, skinless chicken thighs, cut into strips
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 tsp grated ginger
  • 1 tsp garlic, minced
  • Bamboo skewers, soaked in water
  • 1/2 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp sriracha (optional, for heat)
  • 1/4 cup coconut milk

Steps:

  1. In a bowl, mix soy sauce, lime juice, brown sugar, ginger, and garlic. Marinate chicken strips for at least 30 minutes.
  2. Thread chicken onto soaked bamboo skewers. Preheat grill or grill pan over medium-high heat. Grill chicken 3–4 minutes per side until cooked through.
  3. For the peanut sauce, whisk together peanut butter, soy sauce, lime juice, honey, sriracha, and coconut milk until smooth. Adjust consistency with more coconut milk if needed.
  4. Serve chicken satay with peanut sauce and a glass of Wattle Creek Grenache.
