Elizabeth Spencer is the realization of a dream by husband and wife team of Spencer Graham and Elizabeth Pressler. Their debut wine was 1998 Napa Valley Cabernet Sauvignon and have made that wine every year since. The historic, 1872 brick Post Office building in Rutherford, CA serves as theit tasting room and we are proud to serve as stewards of this piece of Napa Valley history

Seared Salmon with Dill

Perfectly seared salmon topped with a fresh dill garnish is a light yet luxurious entrée for holiday meals. The bright red currant and raspberry notes of Elizabeth Spencer Pinot Noir Sonoma County 2022 enhance the delicate, buttery flavors of the salmon while complementing the herbal freshness of the dill, creating a sophisticated and festive pairing.

Ingredients:

  • 4 salmon fillets (6 oz each)
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • 2 tbsp chopped fresh dill
  • Optional: lemon wedges for serving

Steps:

  1. Season salmon fillets with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear salmon, skin-side down, for 4–5 minutes until crispy. Flip and cook an additional 3–4 minutes, until salmon is cooked through but still moist.
  3. Remove from heat and top with chopped dill and lemon slices.
  4. Serve immediately alongside a glass of Elizabeth Spencer Pinot Noir, with optional lemon wedges.

Serves 4.
