Dulce de Leche Mini Cheesecakes

Rich and creamy mini cheesecakes drizzled with luscious dulce de leche are an indulgent holiday dessert. The ripe blackberry and dark chocolate notes of Wattle Creek Cabernet Sauvignon Sonoma County 2019 beautifully complement the caramel sweetness and velvety texture of the cheesecakes, creating a festive pairing that feels both elegant and comforting.

Ingredients:

  • 1 cup graham cracker crumbs
  • 2 tbsp sugar
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup dulce de leche
  • Extra dulce de leche for drizzling

Steps:

  1. Preheat oven to 325°F (165°C). Line a muffin tin with 8 cupcake liners.
  2. Combine graham cracker crumbs, sugar, and melted butter. Press 1 tbsp into the bottom of each liner to form the crust.
  3. In a bowl, beat cream cheese and sugar until smooth. Add egg and vanilla, mixing until combined. Fold in 1 tbsp dulce de leche per portion.
  4. Spoon filling over crust in muffin liners. Bake 18–20 minutes, until centers are just set. Cool to room temperature, then refrigerate at least 2 hours.
  5. Drizzle extra dulce de leche over mini cheesecakes before serving alongside a glass of Wattle Creek Cabernet Sauvignon.
