Pineapple Upside Down Cake

This classic pineapple upside down cake brings a bright, caramelized sweetness that’s perfect for holiday gatherings. The tropical notes and balanced acidity of Wattle Creek Chardonnay California 2023 enhance the buttery, golden cake and caramelized pineapple, creating a joyful and elegant pairing that celebrates festive flavors.

Ingredients:

1/4 cup unsalted butter
1/2 cup brown sugar
1 can (20 oz) pineapple slices, drained
Maraschino cherries, optional
1 1/2 cups all-purpose flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
2 large eggs
1 tsp vanilla extract
1/2 cup milk

Steps:

Preheat oven to 350°F (175°C). Melt butter in a 9-inch round cake pan; sprinkle brown sugar evenly over the butter. Arrange pineapple slices on top, adding cherries if desired.
In a bowl, whisk together flour, sugar, baking powder, and salt. Add softened butter, eggs, vanilla, and milk; beat until smooth.
Pour batter over the pineapple slices and spread evenly.
Bake for 35–40 minutes, until a toothpick inserted in the center comes out clean.
Let cool 5 minutes, then invert onto a serving plate. Serve slices with a glass of Wattle Creek Chardonnay.

Serves 8.
