Lemon Dill Salad

With crisp butter lettuce, fresh herbs, and tangy feta, it’s a dish that brings a pop of flavor and color to your holiday table. The zesty lemon dill vinaigrette ties it all together, making this salad as delightful to eat as it is to prepare.

Ingredients

1 head butter lettuce, finely chopped
1 large handful arugla
1 large handful dill, diced
1 large handful parsley, diced
1 bunch green onions, diced
1 cucumber, diced
1 cup feta, crumbled
Optional: Avocado, pomegranate seeds, pumpkin seeds

Lemon Dill Vinaigrette

½ tsp minced garlic
1 tbsp Dijon mustard
2 lemons, juiced
¼ cup extra virgin olive oil
2 tbsp fresh dill, chopped
½ tsp salt
½ tsp black pepper

Directions

Prepare the dressing: Add all vinaigrette ingredients to a jar with a lid. Shake vigorously until the mixture is smooth and emulsified.
Assemble the salad: In a large bowl, combine the butter lettuce, dill, parsley, green onions, cucumber, and crumbled feta.
Dress and serve: Pour the vinaigrette over the salad add your additional toppings and toss gently to combine. If preparing in advance, keep the dressing separate until just before serving.
